recipes:
vegan pumpkin scones
makes 1 dozen
2 cups whole wheat flour
1 tbsp baking powder
1/2 tsp cinnamon
1/4 tsp nutmeg
1/4 tsp ginger
1/8 tsp cloves
1/2 tsp salt
1/4 cup vegetable oil
1/2 cup pumpkin puree
2 tbsp almond milk
5 tbsp brown sugar

preheat the oven to 400f.  in a large bowl sift together all of the dry ingredients.  mix oil in until it resembles coarse crumbs.  in another bowl, mix the pumpkin, milk & sugar.  add this to the flour bowl and mix to combine.  you'll end up with a fairly dry dough.  {if it really doesn't come together you can add some water or more milk a teaspoon at a time.}

turn this out onto a lightly floured surface and divide it into 3 equal balls.  flatten each one into a round disk that's about 6 inches across and 1/2 inch thick.  using a sharp knife, cut each disk into quarters and place them on a baking sheet.  bake for 15-16 minutes.  remove from the oven, allow the scones to cool and then drizzle them with spiced glaze.

spiced glaze
5 tbsp powdered sugar
1/2 tbsp flour
1/4 tsp molasses
1/4 tsp cinnamon
1/8 tsp ginger
pinch cloves
1 tbsp non-dairy milk

mix everything together in a small bowl and drizzle onto the scones either with a spoon, or from a plastic bag with the tip cut off.

spicy pumpkin seeds 

1 medium pumpkin
3 tablespoons honey
1/4 teaspoon salt
1/4 teaspoon ground cumin
1/4 teaspoon ground cinnamon
1/4 teaspoon ground ginger
Pinch of cayenne pepper, to taste
1 1/2 tablespoons sesame oil

rinse pumpkin seeds after removing them from the pumpkin and allow them to dry (you can spread them on parchment in a low heat oven for about 1 hour)
in a medium bowl combine the spices. heat oil in a large skillet over high heat. add pumpkin seeds and toast for a couple of minutes.  add honey. cook 45 to 60 seconds. transfer to bowl with spices, and stir well to coat. let cool. store in an airtight container for up to 1 week.

recipes:
blueberry bagel french toast


for 3 servings

3 blueberry bagels, cut in two
4 eggs
1 tsp vanilla extract
1 tbsp butter or margarine
1 banana
jam

beat eggs in bowl with vanilla, then coat bagels with the egg mix

heat frying pan on medium heat with butter or margarine until melted

place bagel halves in pan, two at a time & fill holes with egg, after about three minutes, flip and cook the other side.

serve with sliced banana and home-made strawberry jam - or maple syrup!

recipes:
vegan pear scones

makes 8 scones

2 cups whole wheat flour
1 cup quinoa flour
1/4 cup granulated sugar
3 teaspoons baking powder
1/2 teaspoon baking soda
3/4 teaspoon salt
3/4 cup earth balance margarine, cut into cubes
1/4 cup apple sauce
1 cup almond milk + 1tbsp lemon juice (save 1/4 cup for brushing)
1 teaspoon pure vanilla extract
2 small ripe pears, sliced thin
2 tablespoons granulated sugar
3/4 teaspoon ground cinnamon

preheat oven to 400 degrees f.

sift together flour, sugar, baking powder, baking soda and salt.  incorporate earth balance until mixture resembles coarse meal. mix almond milk and lemon juice and let sit til it curdles.  in separate bowl, combine apple sauce, 3/4 c of almond milk & lemon juice mixture, and vanilla.  add the liquid to flour mixture, stir to make a soft dough.

knead on floured surface about 15 times.  roll into a rectangle on a floured surface, about 12-inches long and 10-inches tall.

brush half of the rolled out dough with the almond milk & lemon juice mixture.  arrange pear slices, in a single layer, across the moistened dough.  sprinkle with half of the cinnamon sugar mixture.  carefully fold the dough & press together around the edges.  slice dough into eight even pieces.

place dough on prepared baking sheets.  If dough has warmed, and feels mushy, place in the fridge for 20 minutes to rechill.  Remove from the fridge.  Brush each scone top with almond milk & lemon mix, and sprinkle with remaining cinnamon sugar.

bake scones for 15-18 minutes.
