recipes:

waffles
makes 6 waffles

2 cups flour
2 tbsp sugar
1 tbasp baking powder
1/2 tsp salt
1 3/4 cups milk
6 tbsp oil
2 large eggs

mix ingredients in bowl until well blended.  let sit 5 minutes.  preheat waffle maker. pour 1/2 cup batter into the centre of the waffle iron, and spread it out with a spatula.  close it and wait for the green light to appear.  then remove your waffle!
serve with butter and jam, blueberry greek yogurt and walnuts!

recipes:

 

egg white scrambled eggs
serves 3
1 tbsp olive oil
about 4 green onions, sliced thinly
equivalent of 1 cup (or more) egg white - - I used free run egg whites in a carton
grated monterey jack cheese
salt and pepper

heat oil in a pan on medium and fry the onions for about 2 minutes.  Add the egg white and stir after about a minute to make fluffy.  add cheese, salt and pepper and serve!

recipes:

ciabatta bread
makes 2 loaves

3 1/4 cups unbleached all-purpose white flour
1 tsp salt
1 tsp sugar
1 1/2 tsp dry active yeast
1 1/2 c water
1 tbsp extra virgin olive oil

use wooden spoon to mix dry ingredients.  add in wet ingredients and stir 10 minutes til combined in a dough.  flour down counter space, turn out and cut in half.  place in two floured bowls and cover with tea towels and place in a warm place for 1 hour.  take them out, flatten and fold left and right top and bottom, flip and do the same - -  see this video at 4 minutes for a more accurate depiction: here
put them into the bowls again and cover another hour.  take them out and fold again.  put back in bowls and wait one more hour.  take them out one last time and flatten and lengthen them to make rectangles.  put them on a floured, greased baking sheet and bake them at 450 for 30 minutes.  sprinkle every 5 minutes with a bit of water.
