recipes:

 

egg white scrambled eggs
serves 3
1 tbsp olive oil
about 4 green onions, sliced thinly
equivalent of 1 cup (or more) egg white - - I used free run egg whites in a carton
grated monterey jack cheese
salt and pepper

heat oil in a pan on medium and fry the onions for about 2 minutes.  Add the egg white and stir after about a minute to make fluffy.  add cheese, salt and pepper and serve!
